MRS KING'S FEEL GOOD RECIPES - PIKELETS
Polly being the perfect pikelet model...she may or may not have devoured a couple after the shoot!
20g butter (melted) + extra to cook with
1 cup self-raising flour
1/2 teaspoon of bicarb soda
A pinch of salt
1 egg (beaten)
1. Whisk butter, buttermilk and the egg together in a large bowl.
2. Add flour (sift it if you can), bicarb soda and salt. Whisk well. If you have time, pop the mixture in the fridge to chill for an hour (this will keep the pikelets fluffy!).
3. Pop a little butter in a frying pan on medium heat, wait a minute and then add dollops of the mixture. Turn when bubbles appear and cook on the second side for a minute or two.
4. Add your fave condiment (jam, honey, nutella, butter etc etc!) and gobble up!
*I don't ever buy buttermilk but you can easily make your own - just add a splash of white vinegar to your milk!
NOTE: I don't add any sugar to mine...they are sweet enough once you add jam on top (and kids don't need to be any crazier in lockdown)! And, I usually double the mixture, cook half and save some to cook fresh the next morning for breaky!
